Raita is just a mix of yoghurt, some vegetables or fruit and spices.
Serve the raita with biryani. Growing up, when we served raita, mum always decorated it with some cumin and chilli powder, so I continue to do the same, keeping with my mum’s style!
Cucumber is traditional but raita but with biryani, I like to add a little onion and tomato for a bit of sharpness. It can also be made with freshly chopped pineapple, chopped ahd lightly cooked spinach, or left just plain with the addition of the spices. Serve garnished with chopped fresh coriander and/or chopped fresh mint.

Ingredients
- 2 cups yoghurt plain
- 1 cup cucumber finely chopped
- 1/4 cup red onion finely chopped, optional
- 1/2 cup tomatoes optional
- 1/2 teaspoon cumin powder roasted
- 3/4 teaspoon salt
- large pinch black pepper freshly ground
- pinch sugar
- handful fresh coriander chopped (see note below), or 3 tbs. lemon juice if you don’t have preserved lemon

Instructions
- Whisk the yoghurt to remove lumps and add the remaining ingredients and stir well. Taste for seasoning and adjust if necessary.
- Sprinkle fresh coriander and decorate if wanted with cumin and chilli powder.
- Serve chilled.
