Raita
Cucumber is traditional but raita but with biryani, I like to add a little onion and tomato for a bit of sharpness. It can also be made with freshly chopped pineapple, chopped ahd lightly cooked spinach, or left just plain with the addition of the spices. Serve garnished with  chopped fresh coriander and/or chopped fresh mint.

Instructions
  1. Whisk the yoghurt to remove lumps and add the remaining ingredients and stir well. Taste for seasoning and adjust if necessary.
  2. Sprinkle fresh coriander and decorate if wanted with cumin and chilli powder.
  3. Serve chilled.
